I’m a working mom, which means busy mornings trying to get myself and my kids ready and out the door on time. So for us the easiest thing is a smoothie with a side of something. That could be toast, muffin, homemade frozen waffle, french toast, pancake (more on these in another post) or something as simple as a mini sandwich with cheese, jam or butter.
We make smoothies five times a week. Sometimes we have a huge hit, sometimes we have a miss…think carrot and strawberries – not our best creation. But for the most part we have some pretty amazing smoothies. Be warned, my kids LOVE green smoothies and I love that we get in at least one serving of vegetables at breakfast.
So for all you people turning up your nose right now at this neon green, yes neon green, smoothie, don’t knock it till you try it. We will instantly be transported to a beach chair with a pina colada in your hand. Just close your eyes, but not when you’re driving.
Makes one large smoothie,
or two child size and one mason jar for mom or dad
- 1/2 cup coconut milk
- 1/2 cup water
- 1/2 large banana
- 1 cup spinach
- 3/4 cup plain yogurt
- 1 Tsp coconut oil
- 1 cup frozen pineapple
- 1 tsp Epicure’s Coconut Lime Sweet Dip Mix
Blend all ingredients and enjoy.
We’ve made a few this smoothie a couple different ways. We’ve substituted the water for all coconut milk, or coconut milk for just water. Or water for coconut water, or kick it up a notch and use pineapple coconut water, just watch the sugar content. We’ve also swapped out the yogurt for vanilla or coconut protein powder.
